The Ultimate Breakfast Sandwich


It wasn't until a year ago that I even ate breakfast. I'm sure this is shocking to most of you as this is the favorite meal of the majority. But don't worry, I came to my senses and now it is one of my most important meals. The breakfast I eat, in a lot of ways, determines the outcome of my day. One simply cannot start off on the right foot with a bowl full of lucky charms. A bowlful of oats and dried fruit on the other hand...

In the morning, I normally find my protein through nut butters and yogurt and flax seed. Every now and then, I like to indulge in this really rich and delicious sammy. It's on an english muffin, so it stays small and it's just enough to leave you satisfied for hours without feeling stuffed.


The Ultimate Breakfast Sandwich

1 Whole Wheat English Muffin
Cooking spray
1 egg
2 slices deli ham
1 slicw swiss cheese
1 Tablespoon mayonnaise


1) Toast one whole wheat english muffin

2) Heat a skillet to med-hi and spray with cooking spray. Fry one egg. (I turn over half way through to cook the yolk...but you could leave it runny if you like.)

3) While the egg is cooking, on the other side of the same pan let 2 slices of good deli ham heat up and brown a little. When the egg is cooked, place the ham on the egg and top with a slice of swiss cheese. Let melt.

4) Mayonnaise the english muffin and place the insides on top. EAT UP! Enjoy with a freezing cold glass of milk.
