I mentioned this breakfast two weeks ago in a weekend update. John and I were craving something warm and homey, and something that reminded us of cool weather because we were/are getting so tired of the boiling temperatures we've been having here in Florida. This homemade oatmeal really hit the spot and kept us full for hours. My blog friend Sienna recommended I post the actual recipe for it, and I promised I would. Sienna, I hope you enjoy this oatmeal on a cool day in London!
Warm Cranberry-Walnut Oatmeal
Serves 2
2 cups raw oats
1 cup water
1/2 cup dried cranberries
1/4 cup chopped walnuts
1 tbsp brown sugar
1/4 tsp vanilla extract
1/8 tsp nutmeg
1/4 tsp cinnamon
a dash of salt
Maple syrup to your desired taste
Directions:
Boil water and add oats, bring to low simmer and stir until thickened (about 8-12 minutes). Stir in toppings and serve warm! Easy peasy!

Please don't think I'm bragging when I say this, but it was 57* in Columbus this morning-- Brrr. I am currently blasting my space heater and enjoying a 2nd cup of coffee (and doing my best to send y'all some "cooler weather vibes" down south!) This oatmeal would have been a lovely treat!
ReplyDeleteI am not sure that I have any good "from scratch" breakfast recipes to share -- but Jon's dad makes this fantastic quiche every Christmas morning.... I'll have to get the recipe for that :)
I eat oatmeal for breakfast about 4 times a week and this is going on next weeks meal plan!! YUM
ReplyDeleteI don't even like oatmeal however this looks so good and full of flavor!!! My husband makes the best waffles and pancakes from scratch! I like scones and pumpkin bread from scratch!

ReplyDeleteThis looks fabulous, I eat oatmeal every morning. It is one of those foods that can keep me full till lunch! My go to breakfast is oatmeal with banana and peanut butter!

ReplyDeleteThis oatmeal looks great! I'm not a huge oatmeal fan - the consistency freaks me out, but the added crunch of the walnuts and chewiness of the cranberries would probably help me with that!!
ReplyDeleteYeah, it's currently 76 degrees, but it was like 65 this morning! Gorgeous! We've been having super awesome fall temps the last few weeks, but it's supposed to get back up to 80's later!

mmm...that looks delish! i just love homemade oatmeal. i have overnights pretty much every morning for breakfast. the night before i mix 1/2 mashed banana with dash of cinnamon & nutmeg and 1/2 cup oats. then i mix in 1/2 cup soy milk and cover it in the fridge over night. in the morning, i reheat it and add a tbsp of peanut butter and more cinnamon. AMAZING!!!

I've made oatmeal like this in the rice cooker as well - which is super easy and comes out delicious every time! Throwing it out there if anyone has a rice cooker - it does tons more than rice!
