Coconut-Curried Lentils and Rice

Happy Tuesday, folks! Today I have a special recipe to share, it's one of my all-time favorites from Supermarket Vegan, a cookbook by Donna Klein. Vegan or not, you should pick up this book, it is filled with delicious recipes, and I promise you that you won't even miss the animal product. Not only is this recipe good for you, it's also easy to make and tastes like it took all day.

Ingredients: 
1 1/2 tbsp olive oil
1 cup chopped onion
4 large cloves garlic, finely chopped
1 (14.5 oz) can diced tomatoes with juices
1 (14 oz) can coconut milk
1 cup dried lentils, rinsed and picked over
1/2 cup water (plus more as needed)
1/2 tbsp brown sugar
1 1/2 tsp curry powder
salt and pepper, to taste
1/4 tsp red pepper flakes
1/2 cup fresh cilantro, chopped
Rice of your choice, for serving




Directions: 
In a large, deep-sided non-stick skillet with a lid, heat the oil over medium heat. Add the onion and cook, stirring, until softened (3 minutes.) Add the garlic and cook, stirring constantly, 1 minute. Add tomatoes, coconut milk, lentils, water, brown sugar, curry powder, salt and pepper, and red pepper flakes; bring to a boil over high heat then reduce to low simmer on low heat. Cover and cook until lentils are tender but not falling apart, 40-45 minutes and stir occasionally. Stir in the cilantro and remove from heat. Serve over rice.

  1. I really like making lentil dhal, it's very simple and uses red lentils with fresh coriander(you guys call it cilantro I think) mixed in just before serving. I eat this with chapatis and a red onion, tomato and cucumber salad in lime juice.

  2. We are big on curries in our house so this recipe is right up my street. We have curry at least once a week but I could happily eat it every night! Definitely adding this recipe to my every-growing Culture Connoisseur 'must trys'!

  3. Looks delicious! I am proud to say that we're becoming more adventurous at our house, so we've been trying new things more often. My favorite new recipe so far has been Jenna's (eatliverun.com) channa masala. Woah. Made the house smell like a dream while it was cooking :)

  12. i`m a greek living in Norway so i try to cook us often us i can some greek food to my family. rice and lentils is also a something my mom use to make - a bit different though. this one seems exciting and yummy. i might try it : )

  14. Yum! I've been dreaming of a tasty curry ever since I had my last one from an Asian restaurant in London. And, as this one is vegan, I just might have to make it!

    Is the coconut flavor super strong? I've got to admit, I'm not a huge coconut fan. :/

  17. i wish i cooked some ethnic food at home :( i made wok last night (if that counts) and i love mexican food...but otherwise i dont :( but this looks yummy!

  18. this looks delicious! and your timing is perfect as i just told my husband we need to eat less meat, because cattle eat so much more in grain then they produce in beef. if we all just had a few less meat-free dishes every week, there'd be more grains to go around. :o)

  20. This recipe reminds me of food in South India, lots of coconut cream! If you come to Fiji you'll be able to use fresh coconut milk for this dish ;)
