Roasted Veggie Pesto Pasta



So apparently all my recipes are the same. When it comes to vegetables, I know what I like. I'm considering pulling together a post called "101 Ways to Use These 5 Veggies." I branch out from my usual here and there, but how can one not monopolize when the veggies I like are a) inexpensive, b) very tasty, and c) extremely good for you?

For this recipe I took out my vegetable drawer and just started dicing. I threw in everything I had and decided to slow roast them to perfection. You don't have to use these particular vegetables, use whatever is in season, year-round!




Roasted Veggie Pesto Pasta

Ingredients:
1/2 pound tri-color rotini 
1/4 cup olive oil 
3/4 pint cherry tomatoes,  halved 
4 oz baby bella mushrooms, quartered 
1/2 of a large white onion, diced 
1 zucchini, cubed
1 golden zucchini, cubed 
1 yellow squash, cubed
2 cloves garlic, minced 
Salt and pepper 
3 tbsp pesto (homemade or store bought) 
Freshly grated Parmesan


Directions:
Preheat oven to 375. Cook pasta according to box. Chop veggies and toss in a large bowl with olive oil, garlic, salt and pepper.

Pour veggies onto a large cookie sheet and roast in the oven for 20 minutes, tossing every 5 minutes until they are cooked through and starting to wrinkle.  

Toss veggies with pasta, pesto, and Parmesan. Serve while hot.

  1. looks amazing!!! i love veggies - esp zucchini in the summer. we almost always would roast it on the grill as a side at my parents house. hubby says he doesn't like it, but i bet if i cut it the correct way, roasted it, and mixed it with pasta - he'd never know!!!

  2. Oh Hannah-- YUM! This looks incredible :) I was feeling less than excited about meal planning this week, but this inspires me!

    Staples (items that we ALWAYS have) in our house are: peanut butter, pasta, red & green peppers & chicken sausage. (Not necessarily used together, of course...)

    I see you said "store bought or homemade pesto": Do you have a recipe for pesto that you like?

  3. Amy! Is it weird that I miss you? Lol. I feel like I haven't been able to roam the blog world as much as I'd like and I miss your sweet community! I hope life is treating you well, friend!

    I have actually never made pesto from scratch. I buy some yummy Bertolli brand at Publix. It's quite tasty. I don't typically make things like that because I figure I'll only use some of it and never know what to do with the rest...since I don't use pesto that often. Do you know of a good recipe?

  12. I LOVE a great pasta recipe! (Low carb-schmo marb!) And I eat veggies best when they're snuck into a dish. ;)

    Boxes of noodles are definitely a staple in our house. Peanut butter is another. And BBQ sauce. Actually, I'm not allowed to buy any more BBQ sauce (so says my husband) because I stocked up about 20 bottles during a sale and coupon phase...

  13. Leslie- Hehe... I second your carb-y sentiments! I also love that you have 20 bottles of bbq in your house. You know...my gram has 20 boxes of cake mix from 1970...you better watch out or that'll be you!

  16. Hannah - not weird at all :)Work has been really picking up for me lately and I haven't been around much lately, either -- I miss you, too! Things are going well-- lots of stuff happening, but pretty much all of it is really good stuff.... I'm going to have a heckuva "Wrangling" post this week :)

    I've never made pesto before, but I'm contemplating growing basil this year, so I bet I'll try it at some point. I've had a "Classico" brand before that was pretty yummy... will keep an eye out for the Bertolli kind, too!

  20. Amy- Classico! That's the brand, thanks for reminding me.

    Laura- I would say it is quite healthy. Unless you're anti-carbs or something. But I don't think carbs should be feared.

    Fit with Flash- When I eat this, my belly is happy too. :)
