Have you ever had steel cut oats? I tried them for the first time about a month ago. If you're one of those folks that doesn't really enjoy the texture of oatmeal, this might be the fix for you. The steel cut oats are much thicker and more chewy and hearty....so the final product isn't goopy like regular instant oats.
Steel cut oats may seem healthier, but I'm pretty sure that there's not a huge difference when compared to regular oats, the only difference is the way the grain is cut. But any kind of oatmeal is a great choice for breakfast...as long as you cook it yourself!
Hearty Steel Cut Oats
Serves 2-3
2 1/2 cups water
1/4 tsp salt
1 cup steel cut oats
2 tbsps natural maple syrup (none of that glorified high fructose corn syrup nonsense!)
1 dash of nutmeg
1/2 tsp cinnamon
(brown sugar or raw if this is not sweet enough for you...or you can sweeten with a bit of almond milk)
Top with fruit, nuts, etc.
Bring water and salt to a boil. Add oats, and reduce heat to simmer, stirring often. Can take up to 20-30 minutes to absorb the water and be cooked. But remember, the oats will always be chewy.
This is a great breakfast to make double of and reheat throughout the week. Just add some almond milk and heat up in the microwave! :)
